by the super busy Christmas and New Year season back home in the UK Chef Michael Caines has finally found some time for himself But he is not known as someone who covets his breaks Years ago when he lost an arm in a car accident — barely weeks after becoming head chef at the Michelin-starred Gidleigh Park restaurant in Devon the UK — Caines was back at work within a fortnight He calls the traumatic moment as “a pretty bad day at the office” Five years after the incident he was awarded a second Michelin star at Gidleigh Park and another two years later he was named as Britain’s chef of the year The 46-year-old has recently opened his first restaurant in Asia called Pearls by Michael Caines at the prestigious Jumeirah @ Etihad Towers hotel Excerpts from an email interview: Did you have to alter any kitchen practices to suit the Asian palate Opening my first restaurant in Asia has been hugely exciting Of course we are very mindful of respecting the local and regional dining traditions of the Emiratis and the Muslim community For instance we don’t use pork in our dishes and we offer alcohol-free options However I wouldn’t say I had to necessarily adapt the food to suit an Asian or Middle-Eastern palate I firmly believe that great food cuts across national boundaries My cuisine is modern European and diners in Abu Dhabi wherever they come from have greatly enjoyed what we have to offer based on the wonderful fresh seasonal ingredients available all year round Chocolate orange confit mousse (Photo: David Griffen) If there’s one dish that you are known for which one would that be One of my most popular desserts is my chocolate orange confit mousse In fact if you look very closely at our logo you will see the outline of an orange as a connection to this signature dish So I guess this is one that will be staying on the menu Your daughter is called India Are you an Indophile I have always been fascinated by India its rich culture history and not least its many cuisines I have many Indian friends here in the UK and love chefs such as Atul Kochar Cyrus Todiwala and Vivek Singh all of whom cook exciting modern Indian cuisine I haven’t yet had the opportunity to visit India but I look forward to doing so sometime in the near future Yes my daughter is called India Isn’t it a great name Are you into Indian food How do you think Indian food is doing globally I am a big fan of Indian food While most people in the UK have tasted and enjoy anglicised versions of Indian food at restaurants and takeaways throughout the country it’s interesting to note that there are now a number of Indian restaurants in London serving modern Indian cuisine Some such as Atul’s Benares as well as Tamarind and Trishna have been awarded the prestigious Michelin star This certainly demonstrates that Indian food has real international and global appeal Indeed for its variety of flavours and the richness of its culinary culture and traditions I consider Indian to be one of the greatest of all world cuisines From L to R: Coconut pannacotta and spiced pineapple; salt cod with lemon puree and smoked paprika (Photo: David Griffen) How has life been post the accident Was it difficult to return to the kitchen after sustaining such a grievous injury I had just landed one of the best jobs for a chef in the UK when I had my accident I was only 26 then Apart from losing my arm I was not that badly injured so it seemed perfectly sensible for me to go straight back into the kitchen as soon as possible I was back at work just two weeks and in the kitchen full-time after a month It’s fair to say that I have never looked back since Any plans to expand beyond Abu Dhabi To India We are currently looking at a possible opportunity in Dubai I don’t have any immediate plans to open in India but one thing I have learned in life is that you never know what could be around the next corner Meanwhile after 21 years at Gidleigh Park I have now left in order to concentrate on the creation of Lympstone Manor my own country house hotel restaurant and vineyard located in my home county Devon We plan to open its doors in the spring of 2017 For all the latest Lifestyle News have discovered that pure altruism increases with age especially after the age of 45 General benevolence is more strongly expressed in the second half of the life span the researchers found “It (the research) gives us a deeper look at the people who give to charity and altruistically contribute to society” said study co-author Sanjay Srivastava Professor of Psychology at University of Oregon in the US People may give to charity for numerous non-altruistic reasons such as showing off their generosity to others To isolate pure altruism from other motivations the researchers combined methods from the three fields – psychology behavioural economics and neuroscience Their goal was to find a sweet spot where altruism is done for the simple joy of seeing others benefit without expecting personal rewards or recognition lead author Ulrich Mayr from University of Oregon said In an experiment with 80 men and women between ages 18-67 all with similar work and life experiences the participants made real decisions about either giving cash to a charity or keeping it for themselves The researchers also used functional MRI to look at brain regions associated with value and rewards as each participant watched various scenarios involving money going either to themselves or to charities The participants also took detailed psychological assessments of their personality traits The results showed that for some people neural reward areas were more active when money went to themselves than to charities Others showed more neural reward when they witnessed money going to a charity These individuals whose neural responses suggest altruistic tendencies also gave more money when they had a choice They also showed a stronger expression of pro-social personality traits The research team said the pattern points to a strong underlying dimension that they labeled as general benevolence which reflects altruistic tendencies based on measures drawn from neuroscience behavioral economics and psychology People older than 45 receive more neural reward from seeing others better off they give more money away and they score higher on pro-social personality traits than those under 45 showed the study published online in the Journal of Experimental Psychology: General “It is exciting that the three very different methods converge on a common general benevolence dimension and that we can reliably measure pure altruism” Mayr said For all the latest Lifestyle News download Indian Express App More Top News It alleged that violation of TRAI’s tariff orders has been continuing
