This process makes them tender and flavorful.If you need to feed a crowd, clip each hen in half with a kitchen shear just before serving; your guests will still get plenty of meat. Garnish each serving with very thin lemon slices.Ingredients:4 1-1/4- to 1-1/2-pound Cornish game hens or 4 medium chicken breast halves (about 2 lbs. total)2 lemons1-1/2 cups snipped fresh herbs, such as oregano and basil1 teaspoon kosher salt or sea salt or salt1/2 teaspoon freshly ground black pepperDirections:1.Thaw Cornish game hens, if frozen. Finely shred enough lemon peel from 1 of the lemons to make 2 teaspoons peel. In a small bowl combine herbs, salt, pepper, and lemon peel; set aside. Cut one and a half of the lemons into slices; cut remaining lemon half into four wedges.2.To prepare Cornish hens, remove giblets, if present. If desired, remove skin from hens. Rinse hens; pat dry. Place hens on a plate or baking dish. Place 1 lemon quarter in each hen cavity. (If using chicken breasts, omit lemon quarters.) Tie drum sticks to tail using heavy kitchen string. He won 16 games.Writing on his personal website, rafabenitez.com, he said: “I would like to wish good luck to Zinedine Zidane, my successor, and his staff.
